Strawberry Glaze Smoothie (Erewhon Copycat)

This strawberry glaze smoothie is a homemade vegan version of the cult-favorite from Erewhon Market — made for a fraction of the price. It's thick, creamy, and packed with plant-based protein, complete with a swirl of rich coconut cream and sweet strawberry glaze. This dreamy smoothie is as nourishing as it is visually stunning.

Ingredients
 

For the Strawberry Glaze

  • 1 cup fresh or frozen strawberries roughly chopped
  • 1 tablespoon maple syrup
  • 1 teaspoon fresh lemon juice

For the Smoothie

  • 1 cup frozen strawberries
  • 1 frozen ripe banana peeled and broken into chunks before freezing
  • ¼ large ripe avocado
  • 1 pitted Medjool date
  • 1 serving (about 30g) vegan vanilla protein powder (optional)
  • ½ tablespoon maple syrup (optional, for extra sweetness)
  • 10 drops (about ⅛ teaspoon) vanilla stevia drops (optional, for extra sweetness)
  • ¾ cup almond milk (or any non-dairy milk, more as needed)

Make the Strawberry Glaze

  • In a small saucepan over medium-high heat, combine the strawberries, maple syrup, and lemon juice. Bring the mixture to a boil, then reduce to medium and simmer for about 5 minutes, or until the strawberries have softened. Mash strawberries with a potato masher or fork and simmer for another 8-10 minutes. Transfer to a bowl or heat-safe jar to cool.

Make the Smoothie

  • While the glaze is cooling, make the smoothie. In a high-powered blender, combine all smoothie ingredients: frozen strawberries, frozen banana, avocado, Medjool date, protein powder, maple syrup, vanilla stevia drops, and almond milk. Blend until smooth and creamy. It will be thick, so I recommend using a blender with a tamper to push the ingredients toward the blades while blending. Otherwise, stop to scrape down or stir the ingredients as needed. If necessary, add an extra splash of almond milk to help blend.

Assemble

  • Smear coconut cream around the inside of your serving glass. Scoop some of the strawberry glaze into the bottom of the glass and smear more around the inside. (You may have leftover strawberry glaze.) Pour the smoothie into the glass and serve immediately.
