This Strawberry Glaze Smoothie is a homemade vegan version of the cult-favorite from Erewhon Market—made for a fraction of the price. It's thick, creamy, and packed with plant-based protein, complete with a swirl of rich coconut cream and sweet strawberry glaze. This dreamy smoothie is as nourishing as it is visually stunning.

Erewhon, a beloved local cafe and grocery chain across the LA area of California, is known for its creative, celebrity-collaborated smoothies that often feature natural, organic ingredients and superfoods. Many of these smoothies cost over $20 each, making them a fun but pricey indulgence. I haven’t been to Erewhon myself yet, but until I do, I love recreating their unique smoothies at home.

This strawberry glaze smoothie is inspired by theirs, but with a few tweaks to make it fully plant-based and high in protein. While Erewhon’s version includes collagen, I use vegan vanilla protein instead. The recipe simplifies the ingredient list, skipping the extra bells and whistles — though if you want to go all in with extras like sea moss or hyaluronic acid, I won’t stop you!

Balanced with complex carbohydrates, protein, and healthy fats, it supports glowing skin and keeps you full and energized. It makes one large smoothie for a nourishing breakfast or can be split into two servings for a snack. It delivers the same fresh, luxe flavor for a fraction of the price — no $20 smoothie run needed.

This smoothie is as lovely to sip as it is to look at. It’s almost too pretty to drink… almost. 😉 It’s indulgent yet nourishing, Insta-worthy yet simple, and I’d take it over a strawberry milkshake any day. Here’s what you’ll need to make your own strawberry glaze smoothie:

For the Strawberry Glaze

  • Fresh or frozen strawberries: Simmered down into a thick, fruity strawberry glaze. Either fresh or frozen work well — if using frozen, you may need to cook them slightly longer.
  • Maple syrup: Enhances the natural sweetness of the strawberries.
  • Lemon juice: Brightens and balances the flavor. Fresh is best, but bottled works in a pinch.

For the Smoothie

  • Frozen strawberries: The fruity base of the smoothie that adds a vibrant pink hue. Be sure they’re frozen for the thickest, creamiest texture.
  • Frozen banana: Adds a luscious, creamy texture and natural sweetness. Use a just-ripe banana for the best flavor. A fresh banana works too, but the smoothie won’t be as thick or chilled.
  • Avocado: A quarter of a ripe avocado adds richness and healthy fats. Make sure it’s perfectly ripe — not too firm but not overly brown or mushy. The flavor is very subtle and doesn’t overpower the smoothie, but you can leave it out if preferred.
  • Medjool date: One pitted Medjool date provides natural sweetness and fiber.
  • Vegan vanilla protein powder (optional): Adds thickness, a delicious vanilla flavor, and makes the smoothie more filling. My favorite is Ora Organic. Feel free to skip it if preferred.
  • Maple syrup (optional): Just a touch for extra sweetness, as used in the original cafe recipe. Totally optional.
  • Vanilla stevia drops (optional): Vanilla-flavored liquid stevia (also used in the cafe’s recipe) adds a final hint of sweetness and vanilla flavor. Leave it out if you don’t have it or don’t need extra sweetness.
  • Almond milk: Helps everything blend smoothly. Other milks like soy, coconut, or oat work too.

For Decorating the Glass

  • Canned coconut cream: Chill the can in the fridge for at least a few hours so it thickens and smears neatly inside the glass, creating beautiful, creamy swirls. Canned coconut milk also works — just chill it for at least 12 hours so the cream fully separates and rises to the top. You can also use coconut yogurt, coconut whipped topping, or another non-dairy whipped topping.

How to Make a Strawberry Glaze Smoothie

Here’s how to make your own cafe-inspired strawberry glaze smoothie at home:

Step 1: In a small saucepan over medium-high heat, combine the strawberries, maple syrup, and lemon juice.

Step 2: Bring to a boil, then reduce to medium and let simmer for a few minutes, until the strawberries soften. Mash with a potato masher or fork, then simmer for another few minutes until thick, glossy, and reduced. Transfer to a bowl or heat-safe jar to cool — this helps it cool faster so it’s ready to use right away, though you can let it cool in the saucepan if you prefer.

Step 3: In a high-powered blender, add all smoothie ingredients: frozen strawberries, frozen banana, avocado, Medjool date, protein powder, maple syrup, vanilla stevia drops, and almond milk. Blend until thick and creamy, adding a splash more almond milk if needed to help it blend.

Step 4: Smear coconut cream around the inside of your serving glass. Spoon some of the strawberry glaze into the bottom and swirl more around the sides (you may have extra glaze). Pour in the smoothie and enjoy!

Chloe's Tips

  • Use frozen fruit. Make sure your strawberries or banana (ideally both) are frozen to achieve that dreamy, luscious texture. If neither is frozen, a handful of ice will work in a pinch, though it may slightly dilute the flavor and the smoothie won’t be quite as thick.
  • Use a high-powered blender with a tamper. This makes it much easier to blend frozen fruit into a super thick smoothie and lets you push the ingredients toward the blades without stopping to scrape the sides. A Vitamix blender really comes in handy here.
  • For decorating the glass: Use a spoon or small rubber spatula to smear chilled coconut cream around the inside of the glass first, then add the cooled strawberry glaze and gently swirl. Working with a chilled glass helps everything stay in place for clean, defined swirls, though it doesn’t have to be perfect — the more abstract, the better!

Ingredients
 

For the Strawberry Glaze

  • 1 cup fresh or frozen strawberries roughly chopped
  • 1 tablespoon maple syrup
  • 1 teaspoon fresh lemon juice

  • 1 cup frozen strawberries

Make the Strawberry Glaze

  • In a small saucepan over medium-high heat, combine the strawberries, maple syrup, and lemon juice. Bring the mixture to a boil, then reduce to medium and simmer for about 5 minutes, or until the strawberries have softened. Mash strawberries with a potato masher or fork and simmer for another 8-10 minutes. Transfer to a bowl or heat-safe jar to cool.

Make the Smoothie

  • While the glaze is cooling, make the smoothie. In a high-powered blender, combine all smoothie ingredients: frozen strawberries, frozen banana, avocado, Medjool date, protein powder, maple syrup, vanilla stevia drops, and almond milk. Blend until smooth and creamy. It will be thick, so I recommend using a blender with a tamper to push the ingredients toward the blades while blending. Otherwise, stop to scrape down or stir the ingredients as needed. If necessary, add an extra splash of almond milk to help blend.

Assemble

  • Smear coconut cream around the inside of your serving glass. Scoop some of the strawberry glaze into the bottom of the glass and smear more around the inside. (You may have leftover strawberry glaze.) Pour the smoothie into the glass and serve immediately.
