Here’s how to make your own cafe-inspired strawberry glaze smoothie at home:

Step 1: In a small saucepan over medium-high heat, combine the strawberries, maple syrup, and lemon juice.

Step 2: Bring to a boil, then reduce to medium and let simmer for a few minutes, until the strawberries soften. Mash with a potato masher or fork, then simmer for another few minutes until thick, glossy, and reduced. Transfer to a bowl or heat-safe jar to cool — this helps it cool faster so it’s ready to use right away, though you can let it cool in the saucepan if you prefer.

Step 3: In a high-powered blender, add all smoothie ingredients: frozen strawberries, frozen banana, avocado, Medjool date, protein powder, maple syrup, vanilla stevia drops, and almond milk. Blend until thick and creamy, adding a splash more almond milk if needed to help it blend.

- Use frozen fruit. Make sure your strawberries or banana (ideally both) are frozen to achieve that dreamy, luscious texture. If neither is frozen, a handful of ice will work in a pinch, though it may slightly dilute the flavor and the smoothie won’t be quite as thick.
- Use a high-powered blender with a tamper. This makes it much easier to blend frozen fruit into a super thick smoothie and lets you push the ingredients toward the blades without stopping to scrape the sides. A Vitamix blender really comes in handy here.
- For decorating the glass: Use a spoon or small rubber spatula to smear chilled coconut cream around the inside of the glass first, then add the cooled strawberry glaze and gently swirl. Working with a chilled glass helps everything stay in place for clean, defined swirls, though it doesn’t have to be perfect — the more abstract, the better!

- ¾ cup almond milk (or any non-dairy milk, more as needed)

- 1 tablespoon canned coconut cream chilled
Instructions
Make the Strawberry Glaze
- In a small saucepan over medium-high heat, combine the strawberries, maple syrup, and lemon juice. Bring the mixture to a boil, then reduce to medium and simmer for about 5 minutes, or until the strawberries have softened. Mash strawberries with a potato masher or fork and simmer for another 8-10 minutes. Transfer to a bowl or heat-safe jar to cool.
Make the Smoothie
- While the glaze is cooling, make the smoothie. In a high-powered blender, combine all smoothie ingredients: frozen strawberries, frozen banana, avocado, Medjool date, protein powder, maple syrup, vanilla stevia drops, and almond milk. Blend until smooth and creamy. It will be thick, so I recommend using a blender with a tamper to push the ingredients toward the blades while blending. Otherwise, stop to scrape down or stir the ingredients as needed. If necessary, add an extra splash of almond milk to help blend.
Assemble
- Smear coconut cream around the inside of your serving glass. Scoop some of the strawberry glaze into the bottom of the glass and smear more around the inside. (You may have leftover strawberry glaze.) Pour the smoothie into the glass and serve immediately.
